For open manoeuvre warfare, using them for defensive QRF teams or just rear area communications, there is a good use case for bikes. Assaulting dug in continuous defensive lines with one, though? That just means you're in machine-gun range a bit quicker, and that gunner knows where you are
Likely why we haven’t seen them being used much. The lines have solidified and Ukraine has decided to go full on defensive with the goal of causing as many casualties on the Russians as possible.
Seems like their strategy is to wait for their next wave of mobilization to be done training and having the new brigades equipped before Ukraine does anything new. Likely also waiting for F16s to be in the air as well.

This might be a stupid question to ask, but would it be strategically wise to hook Ukraine up with motorcycles or at least ebikes?
r/ukrainerussiareport explained the heavy use of motorbikes in that they are very maneuverable and can outrun drones.
Spoiler: they can't really outrun drones, as we have seen in a number of FPV drone videos in the last few weeks.
