The same document also states, as far as I can make out, that her husband was born in "Statine", which I'm pretty sure is supposed to be "Stettin" (now Szczecin in Poland), so I'm guessing "Gart Gibic" must be some clerk's attempt at writing an unfamiliar city name.

I actually tried ChatGPT on it, as this looks like the kind of mindless "this thing looks like this other thing" matching it might do. Looking for something close to Stettin that looks similar, it suggested "Gartz".

That seems a likely candidate, but it doesn't explain "Gibic". But if my guess is right and her husband was born in Stettin, perhaps you might be able to trace him. A marriage certificate might give you more reliable information.

Another document we saw says she was born in Bavaria. So I'm not sure what is going on.

In addition to a picture, what year was she born? It might not be part of Germany anymore.

Definitely not Germany anymore. I think one of the other places mentioned is "Stettin", which is now Poland IIRC. Though it's written "Statine"(?), so there's definitely gonna be some difficulties.

Yes, a number of our relatives were born in the same city but different countries depending on the year and the country's border.

Germany had very different borders when it first unified. Could very reasonably be in Poland or possibly other countries. I'm not sure how much city names usually changed in Poland, but it's possible it could have a totally different name today. I'd ask on the Polish and genealogy subreddits.
