They aren't practical in a martial sense really, but in cutting it is just a test of skill because it takes some pretty damn good form to actually cut well and straight through with a horizontal cut.
Also, water bottles are often a cheap item to practice cutting technique on because they're trash anyways and you can see your mistakes in the cut plastic.

As far as I know it's actually way better to stain your clothes with blood (specially considering you're supposed to be in a battlefield so you're gonna be bloody anyway) rather than sheathing your sword while it's still wet. Blood oxidizes the steel and it's not good for the sheath either.
