GLOW. They had the fourth and final season all written and ready to shoot. If they animated the season they could lean even harder into the 80s aesthetic, like JEM with more sex scenes.
The sad thing is they already filmed 3 episodes of the last season before production was shut down. Just have the cast get together and transition into animation.
Carnivale. HBO had huge expectations at the time and promoted the hell out of it. They actually wanted it to be their next big show after The Sopranos. The creator outlined several more seasons when the show was cancelled.
Rome could use a reboot, or maybe start from season 2 again without compressing the timeline so much.
You know Corner Gas did this and it was great. It let them do story lines their small budget would never be able to afford. I wish it'd been on longer, but in the end it had a great run. One of my favorite shows. I wish more shows would consider it.

Movie or tie-in anime? If the movie, honestly please no. There was some thread yesterday talking about really terrible movies that people walked out of and UltraViolet was mentioned a couple of times.
I haven't attempted to watch it since the early 2000s when it came out. A couple of quick YouTube clips later and I was reminded of how hot garbage that was. And honestly forgotten for the better.

The movie is a Very loose adaptation, only really keeping the vampire/disease thing.
Psych. Definitely Psych. You just *know* the guys would be having a blast with cameos from all their favorite ‘80s cartoons. The Blueberry done up as the Gadget-Mobile and the guys going undercover in a Smurf colony. It could even be called “Psych: Kinda-Sorta Outrageous!” because there’d inevitably be a line in there somewhere about Jem being the catalyst for Shawn’s awakening as a man. 😝
Star Trek Enterprise. The animated Star Treks are my favorite of this era, and it would be a good way to continue the stories directly without needing to address the actors aging.
Admittedly, I have not seen a lot of live action TV shows. What inspired me to make this post was HBO's Hung. Damn show ended on a cliffhanger.

Surprised no one's mentioned Ash vs Evil Dead yet. Bruce Campbell hung up his Ash costume for the last time, but has said he's still open to doing voice work. I need this to happen so bad
Game of Thrones needs a do-over for the last couple of seasons… and probably an additional couple more on top of that, just to give it room to end properly.

I was about to say this might be the most obvious one since a third of the cast has been already doing voice work for many other things (even mocap).
That, and they're 22 years older now, and frankly the show lends itself to animation well, imo.

Into the Badlands, they did wild stunts and great action with the live action and it could be so much more insane if it could be animated.
